The Best Vegan Soups
I don’t know what the weather is like where you live, but here we are fully in the chillier fall temperatures. Summer has had its last hurrah and now every day feels crisp and cool. Fall is my favorite season. Between the beautiful leaves, the cooler temperatures and the general cozy feeling, what’s not to love? If you’re anything like me, the cooler temperatures also signal a shift in the foods you eat. Cooler weather is soup season! Soups aren’t always known for being particularly healthy, but all of these soup recipes I’m sharing are plant based, so not only are they free of animal products, but they’re also packed…

Our Favorite Ways to Eat Tempeh
It’s been a while since I’ve posted anything plant based. I know you’ve been thinking about how much you miss it 😉 I used to post weekly plant based recipe round ups. As time has gone on, I’ve transitioned from frequently sharing about food to posting more about homeschooling and books. While I’m not 100% plant based (I eat farm fresh eggs and occasionally fish/seafood), I do primarily eat a whole foods plant based diet. If you’re interested in learning more about my food journey, you can read about that here. Today I wanted to talk about tempeh. Have you heard of tempeh? Most people are aware of tofu, a soy…

19 Plant Based Pantry Recipes
Coronavirus. It’s all anyone seems to be talking about. Depending on where you live, there are growing restrictions as the government tries to contain the spread of COVID-19. Many stores are completely sold out of toilet paper, cleaning supplies and lots of canned and frozen goods. I thought it might be helpful to share some of our favorite plant based meals that use pantry staples (AKA things you might already have on hand or will stay shelf stable if you stock up!). You’re not doomed to eat boxed mac and cheese! If you do need to brave the stores and would like to stock up, these recipes can give you…

Monday Menu Planning – December Week 2
Phew, it's been a busy day. This is much later than I normally post our weekly, plant-based menu, but better late than never, right?

Monday Menu Planning – December Week 1
Hey, everyone! Long time, no see. Life has been busy, so I haven’t blogged in a while. I’m working on a life update to share with you all either later this week or next week, so we can catch up then. In the meantime, I thought I would share a menu with you! (Read more about why I eat plant based here) Rainbow Vegetarian Pad Thai (from Pinch of Yum) – This is one of our all time favorites! It technically isn’t completely plant based, as it has fish sauce and eggs in it. There is a link in the recipe for vegan fish sauce, but I just buy regular fish sauce.…

Monday Menu Planning – Week 14
Hey, friends! Welcome to another edition of Monday Menu Planning! I have a multi-ethnic menu planned this week. If you’ve been reading my blog for any length of time, you’re well aware of my love for ethnic food. I hope you find some recipes today that intrigue you. Let me know if you decide to try any of them out! On this week’s menu … Spicy Sofritas Veggie Bowl (from Pinch of Yum) – If you’ve ever eaten at Chipotle, you may have noticed sofritas before. But if you’re a meat eater, you may not have. Sofritas is a spicy delicious tofu. The texture is similar to ground turkey, in my…

Monday Menu Planning – Week 13
Hey hey hey, it’s Monday! Even though Mondays can feel like a bit of a let down after the weekend, Mondays are a fresh start to a brand new week. Having a positive outlook can change Monday from a day you dread to a day you enjoy. That’s all I have for inspiration this Monday morning. It is still Monday after all 😜 It’s been a while since I’ve posted a Monday Menu. I haven’t really posted much in general lately, but I’m trying to change that. Much of my time has preoccupied with homeschooling (no big surprise there). First grade is more indepth on many subjects than kindergarten (again,…

Monday Menu Planning + August Grocery Challenge Week 3
What up, peeps? I’m going with more casual intros. Also, I’m slightly giddy from trying to caffeinate myself and be productive when I’d rather nap. In other words, just a normal day for me. Grocery Challenge Update Okay, I’ll fess up. I went over my grocery budget last week by $10. It wouldn’t have been that way if I had stuck to my list, but I saw these guys in the limited time section of Aldi: I couldn’t resist. Okay, maybe I could’ve, but I was low on veggie burgers anyway, so I went for it. It doesn’t help that I went grocery shopping while I was hungry. Since they’re…

Monday Menu Planning + August Grocery Challenge Update
Hello, friends! I apologize for my virtual silence lately. Life has been busy. I started a menu post last week, but never ended up finishing it. We jumped back into school and that is consuming much of my free time. So far, first grade has been a blast. You can expect to see a post on that (hopefully) some time this week. Before, I get to this week’s menu, I wanted to share how the grocery challenge has been going. If you didn’t see my explanation of it, check out this post to be filled in. I did pretty well the first week, but I did go over my $75 goal by…

Monday Menu Planning + August Grocery Challenge!
Hey, friends! It’s Monday, so it’s time to post another menu. But I’m doing something a little bit different for the month of August. I’m challenging myself to spend $100 per family member for the entire month (for those horrible at math on a Monday, that’s $25/person each week). I’ve been the opposite of disciplined when it comes to budgeting, especially with groceries. It doesn’t help that I tend to go grocery shopping when I’m hungry. Not this month! I’m cracking down and challenging myself. I got the idea from Nicci over at A Farmhouse Full (her YouTube channel is awesome!). She did it with her large family (of 10!) for the…
