Monday Menu Planning – December Week 1

Hey, everyone! Long time, no see. Life has been busy, so I haven’t blogged in a while. I’m working on a life update to share with you all either later this week or next week, so we can catch up then. In the meantime, I thought I would share a menu with you!

Pinch of Yum

Rainbow Vegetarian Pad Thai (from Pinch of Yum) – This is one of our all time favorites! It technically isn’t completely plant based, as it has fish sauce and eggs in it. There is a link in the recipe for vegan fish sauce, but I just buy regular fish sauce. So far, I’ve noticed no ill effects from fish sauce. Don’t leave it out! It’s essential to the flavor for the sauce. I also typically chop up whatever veggies we have on hand (rather than spiralizing, like the recipe), but I keep the sauce recipe the same.

Minimalist Baker

Vegan Sloppy Joes (from Minimalist Baker) – This is a recipe we all enjoy! It’s also one I’ve served to meat eaters quite a few times and it gets rave reviews every time (after the initial skepticism). Lentils are an excellent substitute for ground beef. The texture is fairly similar. The best part of this meal is how quickly everything comes together. You can serve with a salad, other side or just eat several sandwiches each. The leftovers are great too!

Rabbit and Wolves

One Pot Vegetable Pot Pie Noodles (from Rabbit and Wolves) – This recipe is delicious! Despite the fact it’s plant based, it honestly tastes like it has chicken in it. It’s very delicious! We used frozen veggies (because it’s so time saving) and egg noodles, but if you are completely vegan, you can find eggless egg noodles as well.

Spicy Sofritas Veggie Bowl (from Pinch of Yum) – Don’t be scared off by the fact this recipe has tofu. I promise it’s delicious and will make you love tofu! My husband doesn’t like tofu at all, but this recipe is one he absolutely loves (he says it’s because you can’t tell it’s tofu, ha!). Since we’re a family of spice wimps, I do use much less chipotle. I usually just put a tablespoon or two of the sauce from the canned chipotles and it gives that smoky flavor without adding too much spice. It tastes so similar to Chipotle’s sofritas burrito bowl! All the heart eye emojis 😍😍😍😍😍

 

Well, that’s it for this week! We are going out with friends one night this week and will likely also have a leftovers night. I’m sure we’ll be doing a lot of baking this week as well. Claire and I always spend a lot of time baking Christmas cookies to give as gifts to family, neighbors and friends!
