Monday Menu Planning – Week 14

Hey, friends! Welcome to another edition of Monday Menu Planning! I have a multi-ethnic menu planned this week. If you’ve been reading my blog for any length of time, you’re well aware of my love for ethnic food. I hope you find some recipes today that intrigue you. Let me know if you decide to try any of them out!

On this week’s menu …

Spicy Sofritas Veggie Bowl (from Pinch of Yum) – If you’ve ever eaten at Chipotle, you may have noticed sofritas before. But if you’re a meat eater, you may not have. Sofritas is a spicy delicious tofu. The texture is similar to ground turkey, in my opinion. If you’re iffy about tofu, this is a great place to start. It doesn’t taste like tofu or have that mushy texture we often associate with tofu. My husband is not a very big fan of tofu, but even he loves sofritas! I’ve said many times that we are pretty much spice wimps, so I tone the spiciness WAY down for this recipe. It called for several chipotle peppers and a few tablespoons of adobo sauce. I just used a tablespoon or two of adobo sauce and left out the chipotles all together. This still gave the dish that smoky chipotle flavor, but it wasn’t spicy.

One Pot African Peanut Stew (from Making Thyme for Health) – Last week, I was on a kale and sweet potato kick. That carried over to this week, especially since I didn’t end up making the sweet potato, kale and quinoa dish (find that recipe here). This stew is delicious! It’s an odd combination of ingredients, but trust me, it works! In this case, we will substitute kale for collard greens. Other than that, this is a recipe I don’t tend to mess with at all. It’s too yummy!

Slow Cooker Coconut Curry Lentils (from Budget Bytes) – It’s been a while since I made curry (or at least Indian curry rather than Thai curry). My main reasoning for this dish is that I found plain coconut yogurt at Meijer, so I can make homemade na’an again! Homemade na’an is so much yummier than store bought, but the recipe I’ve always used calls for Greek yogurt, which I can’t have anymore. When I found plain vegan yogurt, the first thing I wanted to do was make na’an. And what’s na’an without curry?

Easy Veggie Pizza with 20 Minute Crust (from Vegan Richa) – I’ve posted this recipe multiple times, but that’s because we eat it that much! Anytime we make pizza, we always use this recipe. It’s quick, delicious and easy. I double the recipe and make one vegan pizza for me and one non-vegan for Peter and Claire to split.
